Roti canai is a type of Indian-influenced flat-bread found in Malaysia and Indonesia. It is often sold in Mamak stalls in Malaysia; also in Malay, Minangkabau and Aceh restaurants in Indonesia. It is known as roti prata in Southern Malaysia and Singapore, and is similar to the Indian Kerala porotta. Roti canai is circular and flat. There are two ways to make roti canai that is either to twirl it until the dough becomes a very thin sheet and then folded into a circular shape or to spread out the dough as thinly as possible before being folded. Then the folded dough is grilled with oil. The first method is more popular and faster than the second. The term 'roti paratha' in Malay means 'plate bread'.

Famous Taiping Popiah or Fresh Spring Rolls
Popiah or fresh spring rolls are delicious. They are eaten with a sweet sauce such as a bean sauce, a blended soy sauce or oyster sauce or a shrimp paste sauce and with hot chilli sauce before it is filled. The filling is mainly finely grated and steamed or stir-fried turnip or mengkuang which has been cooked. Other ingredients include bean sprouts, French beans, and lettuce leaves, grated carrots, thinly sliced fried tofu, finely chopped peanuts or peanut powder, fried shallots, and shredded fried eggs. Other common variations of popiah include include pork (lightly seasoned and stir-fried), shrimp or crab meat. Some hawkers will add fried pork lard. In Taiping, you will find the best popiah at the Air Kacang Taiping coffee shop at the corner of Jalan Panggung Wayang and Jalan Kelab Cina. Say hi to Ah Kuan, second generation popiah seller who inherited this delicious recipe from his mum who made Taiping popiah famous at the Tai Chien restaurant during the early 60s. In mainland China, Singapore, Malaysia and Taiwan there are "popiah parties" at home, where the ingredients are laid out and guests make their own popiah with proportions of ingredients to their own personal liking.

Chingay Singapore, Parade of Dreams Grandest Street and Floats Parade In Chinese Hokkien dialect "Chingay" means "the art of costume and masquerade" alluding to street performers carrying decorative mini stages or floats on their shoulders. It started in Penang in the early 19th century as a religious festivity and included giant triangular flags and lanterns which became known as "The Giant Flags Procession". The traditions of Chingay spread further south to Johore and Singapore and became part of the Chinese New Year celebrations. In 1973, Singapore had its first Chingay parade. It was so popular and enjoyed by Singaporeans and tourists that it became an annual event of the Chinese New Year celebrations. Since 1985, Orchard Road became a permanent venue for the annual Parade of Dreams reflecting the people's dreams, cultures, and celebrations! Singapore Chinggay - A Colorful Parade of dreams and culture. An annual event not to be missed and usually held as part of the Chinese New Year festivities. Usually colorful and brightly lighted floats, street performers and music celebrating the people's dreams and culture. The giant flags parade is the main attraction and performers come from all over the island as well as neighboring countries such as Malaysia, Thailand and also from Hong Kong.
